Well Nourished | Well Bread

We all know bread doesn’t have to be bad for you, at WELL CURATED we wanted to create the ultimate breakfast loaf, loaded with health benefits. By combining all of our favourite fruits, nuts and seeds into a gluten & grain free recipe, our Well Bread is a nourishing source of nutrients and minerals, essential for a healthy lifestyle. By upping your energy, reducing inflammation and boosting immunity, the ingredients of this health conscious loaf can dramatically improve your diet. Suitable for vegans, it is high in protein and fibre, and contains healthy fats. All of the ingredients are soaked for better digestion and nutrient absorption. Other than the psyllium husk and flax which are non-negotiable as they act as the “glue” to hold the bread together, you can adapt this recipe according to the nuts, seeds, and dried fruit you have in your cupboard.

Ingredients

  • 200g Flaxseed

  • 250g Ground flaxseed

  • 100g Psyllium husk

  • 120g Almonds

  • 120g Walnuts

  • 120g Hazel nuts

  • 120g Pumpkin seeds

  • 100g Sunflower seeds

  • 100g Chia seeds

  • 50g Hemp seeds

  • 100g Dried apricots

  • 200g Dried pitted prunes

  • 100g Dried pitted dates

  • 200g Dried figs

  • 4tbsp Coconut oil

  • 200ml A Grade maple syrup

  • Pinch of Himalayan sea salt

Method

  • Mix the hazelnuts and almonds in a blender on a low setting so they are not ground but broken up. Alternatively put them in a bag and bash them about a bit. Do the same with the walnuts, don’t blend these if you like a bit of crunch in the bread.

  • Add the nuts to all the other dry ingredients and mix well.

  • Chop all the dried fruit into raison size pieces and add to the dry mix.

  • Add the maple syrup, coconut oil (heat until liquid if solidified) and water to the dry ingredients and mix until it reaches the consistency of cake mixture.

  • Line and grease a loaf tin with baking paper and fill with the mixture, pat it down so that it feels firm.

  • Place the tin in the fridge for 8hrs to allow the flaxseed and psyllium to work their magic and bind everything together.

  • Bake at 160c for 1 hr.

  • Serve with nut butter, avocado or boiled eggs.
